Ruffino’s Serelle Vin Santo del Chianti is a delicious dessert wine with beautiful amber and deep golden hues. Luscious aromas of candied fruit and honey with a touch of orange peal, pepper, and cinnamon. Sweet notes of dried apricots, figs and raisins are married with pleasant hints of vanilla, honey, and aromatic spices. A pleasant delight on the palate with a long aftertaste of crème brûlée notes. A perfect compliment to mascarpone based desserts, crème brûlée, biscotti, or simply enjoyed on it’s own.
The grapes for the production of Serelle are carefully chosen in the vineyards during harvest. The bunches are slowly dried in the “vinsantaia”, a milieu characterised by a natural and constant ventilation. This process lasts until the beginning of December when the best bunches are chosen and vinified.
After having been destemmed and softly pressed, the most which is thick and honey-like because of the high sugar concentration, is fermented in 225 l. French oak casks at a controlled temperature of 15/17°C. The fermentation continues very slowly until the month of March when the right alcohol/sugar balance had been reached.
Serelle is refined in the small oak casks (with oxidising process) for approximately 3 years.
After the blending of the casks and a brief resting period in stainless-steel vats, Serelle Vinsanto is bottled and further refined.
